Wild Blueberry Pie Recipe

I distinctly remember the first time I had Wild Blueberry pie. It was the summer before my freshman year of high school, and my family took a vacation to Bar Harbor, Maine (home of the Wild Blueberry barrens I got to tour a couple years ago!). I grew up in Buffalo, New York, (even though I now call Boston home) so at the time my family endured twelve hours in the car to make it to Maine from Western New York. Twelve. Hours. Now this was before the days of cell phones and iPads and whatever other technology makes the time pass. Needless to say by the time we finally got to Maine, we were beat.

Luckily, my Dad had some friends who lived in Camden, Maine, so we made a pit stop there for a night before heading to Bar Harbor. I don’t remember a whole lot from that visit with my Dad’s friends except for one thing: the homemade Wild Blueberry pie they served upon our arrival. It was my first time tasting Wild Blueberries, too! It was heavenly and I was immediately hooked.

It’s also National (WILD) Blueberry Month, giving us one more  wonderful reason to celebrate our state’s wild berry. To top it all off, July is also National Ice Cream Month! When you add it all up, this amazing combination represents comes down to enjoying Wild Blueberry ice cream on a beautiful summer day in Maine.

If you can’t make it to Maine this summer, you can swing by your local supermarket and take home a little bit of Maine – in a bag of frozen Wild Blueberries. Easy enough to make, this could become part of your annual summer festivities.

Wild Blueberry Vegan “Ice Cream” with Ginger and Lemon. Making “ice cream” from ripe bananas is all the rage these days. This recipe is simple with only five ingredients you probably already have in your kitchen. Using ripe bananas also means you can skip the added sugar and milk making this a healthier frozen treat. Shashi Charles puts a Savory Spin on Life

A native of Sri Lanka who spent her childhood in Abu Dhabi, London, and other foreign countries, Shashi Charles didn’t even see a smoothie until the early 1990s when she moved to America as a teenager. Later, when she became a mom and a runner, smoothies took a more prominent role in her life.

Her love of smoothies translated into a winning smoothie recipe for our recent Wild Your Smoothie recipe contest. Shashi’s beautiful, healthy and delicious Oatmeal Wild Blueberry Breakfast Smoothie was a runner up in this year’s contest because of its exquisite taste, color and inspiring blend of ingredients. We recently caught up with Shashi to hear her story, learn more about her delicious winning smoothie recipe, and what she loves about smoothies and Wild Blueberries.

Shashi’s story is an international one. Her mother was a diplomat from Sri Lanka and her childhood included a healthy dose of travel – and living – in foreign lands. When the time came for their daughters to attend college, Shashi’s parents set their sights on America.

“We decided to come to Atlanta, so in 1992 I enrolled here in college,” Shashi explains. After graduating, she pursued a 20-year-long career in print production, advertising, branding, and corporate identity. About four years ago, after quietly following several celebrated food blogs, Shashi launched a blog of her own.

Savory Spin (formerly known as the Runnin’ SriLankan), is a foodie website, and Shashi is now a full-time recipe developer and brand ambassador working with the likes of Bob’s Red Mill, Tyson, Progresso, Bumble Bee, Premier Protein, and Sprouts. Her recipes and food photography have been featured on TodayFood, Buzzfeed, Fit Fluential, and The Huffington Post.

“I started cooking at a young age, and by the time I was 14, I was cooking dinner at home one day of the week because both of my parents worked,” recalls Shashi. “I usually prepared typical Sri Lankan meals, which is like Indian cooking, but with more spices.” Shashi explains that cuisine was a big part of her life, and it was her daughter who encouraged her to launch the blog.

“I was always cooking, but I never kept track of my recipes, so one day my daughter said, ‘Mom, why don’t you start a blog; that way I can find your recipes when I need them?’”

The seed was planted and Shashi took her daughter’s sage advice, launching her blog in 2013. It started out mostly as a hobby but fans and companies started reaching out and it quickly led to business opportunities and sponsored posts. Today Shashi boasts nearly 30,000 Facebook followers. Last September, she decided to blog and develop recipes full time.

Learning about smoothies

Smoothies were not part of the culture in Ski Lanka or in the Middle East, where Shashi was raised. In fact, in the Arabic culture of Abu Dhabi, it was strictly forbidden to be seen outside with food. Portable “on the go” foods, such as smoothies, were not acceptable. “I did not grow up drinking smoothies at all,” says Shashi. But in America, when she became an avid runner, Shashi got into the regular habit of making smoothies, because they were something she could take in her car and enjoy on the drive to work. “I started incorporating them about 15 years ago, after my daughter was born and life got hectic,” she says.

The winning recipe

Shashi says the winning recipe for the Wild Your Smoothie Contest took about 5 to 6 attempts before it was perfected. “My daughter helped me as a taster,” says Shashi. “The first attempts did not have oatmeal. Then I added more peanut butter, but that one didn’t work, so I kept trying.” Finally, Shashi arrived at what she and her daughter thought was a desirable blend of ingredients.

The highlights of the recipe are:

  • Oats, which Shashi enjoys because, “they keep me satisfied longer.”
  • Frozen Wild Blueberries, which Shashi did not know about before the contest, but now keeps stocked in her freezer. “Ever since the contest, I’ve realized how much I love Wild Blueberries,” she says. “I keep seeing the big bags of Wild Blueberries at Kroger’s and Wal-Mart, and I buy them and keep them in my freezer. I use frozen Wild Blueberries all the time now.”
  • Dried apricots, which have a beautiful color and add natural sweetness. Shashi says she tried the recipe with dates first, but she didn’t like the color, so she switched to apricots. (Shashi uses a Vitamix to blend her smoothies, but she says that you can soak dried fruits, such as apricots, in warm water to soften them if you are using a less powerful blender.)
  • Coconut milk, which is popular in Ski Lanka. In fact, fresh coconut oil and coconut milk were very common in her childhood, but they were also considered high fat and bad for you. “Here in American the opposite is true,” she laughs. Shashi’s food philosophy is everything in moderation. “I use coconut oil and coconut milk, but I consume only a single serving. My smoothie recipe serves two. “I make it for my daughter and we share it.”
  • Peanut butter. Shashi says she uses a natural brand of peanut butter and she likes the protein that this ingredient offers.

Shashi admitted to being in a “smoothie rut” before entering the Wild Your Smoothie Contest. Well, she really broke the mold with this smoothie recipe, and you’re going to love how she blended together a common list of ingredients into something truly special. We also noted that Shashi included two alternatives for her toppings – one decadent and one naked. After all, not every smoothie lover is alike. Congratulations, Shashi! Colorful Summer Salads + Wild Blueberry Orzo Salad Recipe

One of my favorite things to do when the weather warms up is to eat outside. Whether I’m having friends over, having brunch with my girlfriends, or meeting up in the park for a picnic potluck, a portable, flavorful summer salad is key. This Wild Blueberry Orzo Salad fits the bill!

As you know, I love adding Wild Blueberries to savory dishes for an unexpected pop of flavor and antioxidants, not to mention the gorgeous color. I’ve added Wild Blueberries to pasta before, and let me tell you, I am hooked. It turns the orzo pasta a bright amazing purple hue, which is perfect for a fun summery picnic dish.

The real kicker is the Wild Blueberry vinaigrette! Adding Wild Blueberries to the salad and blending them into the dressing means you get extra antioxidant power with every bite. The dressing is super simple to make and so zesty and fresh I bet it would taste good on just about anything – try it drizzled over sautéed vegetables or as a marinade for chicken or tofu

You can easily customize this salad. Just about any grain or pasta would work (try quinoa, barley, or wheat berries) and any veggie would work too. Next time I’ll try sautéed broccoli and toss in some baby arugula.

I used orzo for my husband. He likes to joke that orzo is like ice cream for him because it’s such a treat when he gets it. But don’t worry, this recipe is much healthier than ice cream, even if it’s just as much of a treat!

A Mother’s Day to Remember: 5 Tips and Easy Recipes to Surprise and Delight Her

With Mother’s Day on the way, it’s time to start thinking about how to surprise mom on her special day. As a mom, I can attest to the fact that there’s nothing sweeter than waking up on Mother’s Day to the smell of bacon wafting from the kitchen. I love a breakfast that’s delicious, pretty, protein-packed and healthy. But most of all, I like knowing that my little family cared enough to make plans to celebrate me!

Here are five tips and easy recipes for making Mother’s Day a memorable treat for the special mother in your life.

  1. Don’t wait until the last minute to make your Mother’s Day plans whether that means making her breakfast at home or taking her out for a special meal; and enlist help from everyone involved including dad, siblings, friends, or relatives.
  2. Make a shopping list that includes mom’s favorite breakfast ingredients. Some suggestions: fresh orange juice, thick cut bacon or maple flavored sausage, her favorite coffee or tea, maybe a little champagne or prosecco to make a mimosa, and frozen Wild Blueberries, which add color, taste and health to her breakfast. Cara Harbstreet Shares Her Passion for Health and Vitality + Her Winning Smoothie Recipe

As a registered dietitian, clinical nutrition specialist, and runner, Cara Harbstreet keeps a tight and active schedule. She’s motivated – not just by her own internal drive and passion for a vital life – but by seeing her patients and her clients achieve success too.

Cara’s delicious Wild Blueberry Mango Lassi Smoothie was a runner up in this year’s Wild Your Smoothie Recipe Contest. We recently had a conversation with her to learn more about the inspiration behind her delicious recipe, why she believes smoothies are such a perfect food and what she loves about her profession. Here’s what she had to say:

“Most of my clients have a general idea of how they’d like to improve their health and diet, but they struggle with how to translate that into setting goals and behavior change,” says Cara.

As a registered dietitian, Cara’s job is to help build a lasting framework for success, which includes providing tools, support, and accountability. “Many of my clients are concerned about illness or a family history of certain diseases,” she explains. “We work together to collect information that is backed by research, and we create a plan for how to incorporate healthy eating habits into their lifestyle.”

“A lot of people struggle with the basics.  They want to be healthy and they want to be there for their families and enjoy living the life they want to live, but they struggle with creating a successful plan. I really enjoy when my clients get validation that their efforts are working,” she says.

As part of her consulting work, Cara offers cooking classes and workshops to help inspire clients and put culinary tools in their toolbox. “Many people lack skill and confidence in the kitchen, and giving them tools for cooking can be really helpful.”

Becoming a health advocate

Cara grew up in Kansas City where she lives today with her husband and assemblage of furry friends. In addition to her private practice, she is a diabetes educator at Children’s Mercy Hospital, where she provides family education for newly diagnosed Type I Diabetes Mellitus patients. In 2016, Cara created Street Smart Nutrition, an online resource for people seeking healthy recipes, articles, and advice. In addition to providing individual, family, and small group nutrition counseling, Cara is also a freelance writer for local and national media. Before becoming a nutrition blogger and influencer, Cara was an athlete, a high jumper, to be exact. She picked up long-distance running after her collegiate career was finished. Today she still runs, and when we spoke, she had just completed her ninth half-marathon.

“Running is a passion for me. It’s a huge stress reliever and a way of clearing my mind,” says Cara. But she confesses that her early running career would have been more successful if she had known then what she knows now about food as fuel. Cara believes that nutrition can help to treat and prevent injury; it can help you develop lean muscle mass and strong bone density; it can create physical wellness and promote overall health and longevity. “The connectivity of these issues was missing when I was younger,” she confesses.

To stay healthy and manage her stress, Cara runs about 15-25 miles per week, practices yoga a couple of times a week, and tries to hit a group exercise class each week. Because her energy level is high in the late afternoon and early evening, she prefers to run after work. She does not use music.  “I actually prefer quiet and the chance to concentrate on my thoughts. This is a chance for me to shut down from all electronics,” she says.

The winning recipe

Cara is a regular smoothie drinker, especially during the spring, summer, and fall months.  Her winning Wild Blueberry Mango Lassi Smoothie recipe combined some of her favorite ingredients, including:

  • Frozen Wild Blueberries
  • Frozen Mango
  • Plain kefir to create a creamy texture
  • Spices, including cardamom and cinnamon

“For this contest, I wanted to try something new, so I conjured up a combination of flavors and used my Magic Bullet to blend it up,” says Cara.  She discovered the Lassi at a local Indian restaurant and she liked the flavor, so the idea of adding Indian spices was intriguing. “Spices are easily overlooked, yet they are a great way to get more antioxidants and more anti-inflammatory properties into the diet, plus they are anti-fungal, anti-microbial, and they support healthy blood sugar levels.”  Cara says she likes cinnamon, cloves, and ginger, which help support our immune system.

Frozen fruit is a staple for Cara, but before the contest, Wild Blueberries were new to her. “I immediately noticed the better, more intense flavor, and the beautiful color of the Wild Blueberries,” she says.  “Now I keep them in my freezer all the time.”

I don’t know about you, but my mood always takes a turn for the better when I look out my window and see flowers and grass instead of ice and snow. Spring is certainly a mood-booster, but the changing seasons don’t always give you the feel good fuel you need and I’ve got great news to share with you on the food front!
