Meet Charlotte Martin, Winner of Our Wild Your Smoothie Recipe Contest

Find out what she loves about smoothies and how she avoids that dreaded smoothie rut.

Now that the winner of our “Wild Your Smoothie” recipe contest has been announced, we’re excited to get to know our grand-prize winner Charlotte Martin. Charlotte is a registered dietitian from Northern Virginia and creator of Nutritiously Twisted, an online blog devoted to putting a healthy twist on favorite standby recipes. As winner of the contest, Charlotte will be joining the Wild Blueberry Association of North America this summer on a trip to Maine to explore the Wild Blueberry Barrens.

Charlotte had never heard of Wild Blueberries before the contest. She has never been to Maine, although she confesses to loving lobster, and we think she has a big treat in store. I sat down with Charlotte recently to talk about her nutrition philosophy and what she loves most about smoothies.

How did you get into the dietician field?
I was a math and science person, but I never wanted to be in a lab. While in college I discovered that there was a track for becoming a dietitian. The classes were small and it sounded interesting, so I switched my major. I had always been interested in food and nutrition; and I loved reading about diets. In fact, I ended up doing my honors thesis on the Paleo Diet and saw first-hand that faculty on that diet started dropping a lot of weight, losing a lot of fat mass, and even started going off their cholesterol medications. But as with any single diet, it was hard to adhere to, and I learned that diets are more complex than one might think.

Tell us about your nutrition philosophy.
When I first started out as a dietitian, I was a bit closed-minded. But over time, I have become more open minded. I believe there is not one perfect diet for everyone and that as dietitians we need to accept all the tools out there. For example, if a whole foods diet is not working for someone, then it’s ok to include meal replacements, such as nutritionally-balanced shakes, bars, or other food item intended as meal substitutes. As long as people get all of the food groups, there is no singular way of eating for everyone. It’s important that dietitians be open-minded. If someone is asking for a certain diet—I think it’s important that we don’t roll our eyes, but rather see how they can incorporate that diet in the healthiest possible way.

When did you launch your blog Nutritiously Twisted?
I launched it in 2016 and I’m already in the process of redesigning it and switching platforms. I love cooking and making healthy recipes, and I also love doing TV segments and writing articles. When I started getting into social media, I found that I wasn’t getting as much engagement and I didn’t have anywhere to send people. That’s when I realized I needed to formally launch a website with a blog. This has increased my visibility and allows my friends, family, and clients to find me and my recipes.

Were you familiar with frozen Wild Blueberries before the “Wild Your Smoothie” recipe contest?
I was not, and when I went looking for them in my local grocery story, I could not find them. I eventually found them at my local Safeway. Now I’m a big fan because I’ve learned they are nutrition superstars, packed with disease-fighting nutrients and intense flavor.

What do you love about smoothies?
I love a lot of things about smoothies.

  • They are super convenient.
  • You can fit a lot — healthy ingredients, heathy fats, healthy carbs — into a smoothie.
  • They are filling.
  • They are nutrient dense, in terms of vitamins and minerals.
  • You can get creative and experiment with smoothies.

I make a lot of high-protein smoothies with heathy fats and fiber. I also like to experiment with different thickeners, like Greek yogurt and avocado. Lately my thing has been peanut butter, and of course, Wild Blueberries.

What’s the best way to avoid a smoothie rut?
I don’t tend to have this problem because I like to experiment with different ingredients. But for those who do find themselves in a rut, I highly recommend using the internet. There are so many amazing recipes out there in every flavor profile. If you want an apple pie smoothie you a can find dozens of them online. You can use resources to find recipes and look up recipes that suit your dietary needs. In other words, if you need more protein you can search for “protein smoothies.” Spices can add health and taste to your smoothies too, and almost everyone has spices in their pantry. I’ve recently been adding vanilla extract.

Can you talk about how you developed your Wild Blueberry Flax Muffin Smoothie recipe?
Honestly, I’m a Starbucks addict. I had heard of the contest and I was trying to come up with something creative. I saw these blueberry muffins at Starbucks and thought that would be amazing, but that’s not too creative. So, I thought, how can I make it more creative? I decided to add golden flax seed, which I love adding to my baking and omelets. Because I was at Starbucks, I was also thinking about coffee. So, I thought, what about combining an entire breakfast—fruit, grain, yogurt, and coffee—into one smoothie?

How did you create that beautiful frosting-like topping?
I knew I wanted to incorporate Greek yogurt into my recipe. Everyone knows they can mix yogurt into a smoothie, but I wanted to make it stand out. So, I used a zip-lock bag, cut the tip off, and pressed out a frosting like topping. Then I sprinkled a little flax seed on the top.

What are you most excited to see this summer in Maine?
Well, I have never been to Maine, and I am very excited to see it. I looked up pictures of Bar Harbor and it looks beautiful. I’m really looking forward to seeing the growing and harvesting of Wild Blueberries. I’m also curious about the freezing and preserving process.

We’re excited to welcome you to Maine this summer, Charlotte!  It’s going to be a memorable and educational trip.

Wild Blueberries Provide the ‘Secret Sauce’ for these Quick and Easy Meatless Tacos

I’m always on the lookout for dinner recipes that I can throw together in no time at the end of a long day. I rarely want to spend a ton of time in the kitchen cooking when dinnertime rolls around, so the less time it takes me to get delicious food from stove to table, the better!

We aren’t a big-take out family, but many of my clients are. If I had a dime for how many times I’ve heard a client tell me they have no time for cooking dinner, well, I’d have myself a giant pile of dimes. Because of that, I love the challenge of creating super quick meals that make take-out look inconvenient! These ridiculously easy Black Bean Tacos with Wild Blueberry Sauce are my best defense against the take-out argument, and I bet they’re a whole lot tastier and healthier, too. In our house, tacos are a weekly staple, and no one’s complaining about it.

A common myth about Mexican-inspired food is that in order to have big flavor you have to create calorie-bomb dishes that are filled with greasy meat, cheese, and sour cream but little to no veggies. This just isn’t true. You can create delicious tacos with tons of Mexican flavor without sacrificing time, money, or taste. As far as time in the kitchen goes, it’s actually easier to make a healthy taco that’s colorful, flavorful, and nutritious than it is to make an unhealthy one. With these Black Bean Tacos with Wild Blueberry Sauce, a few pantry staples go a long way in making healthy tacos come together in just about five minutes.

The corn tortillas tacos are stuffed with black beans and frozen corn, which I always have on hand. Then, I add a pre-chopped salad mix made with cabbage and cilantro (three cheers for dinners that don’t even require a knife or a cutting board!). The result: a fiber rich, veggie packed taco that’s oh-so-easy.

The Wild Blueberry Sauce is the real star of this super easy dinner. This tasty sauce adds a sweet and zesty flavor while packing in plenty of antioxidant goodness.  I love using Wild Blueberries in savory dishes for an unexpected pop of gorgeous color and flavor, like in my Wild Blueberry Sweet Potato Stacks, Wild Blueberry and Miso Salad Dressing, or Wild Blueberry Quesadillas. These five-minute tacos are no exception! I hope you’ll give them a try the next time you need a family-pleasing, flavorful dinner in no time.

And the winners of the Wild Your Smoothie Recipe Contest are….

The Wild Your Smoothie Contest results are in and you’re going to absolutely love the top three winners! In total, we received hundreds of entries for the contest. You voted. Here are your winners.

Runners Up

We have two runners up for the Wild Your Smoothie contest.

  • Cara Harbstreet, M.S., R.D., L.D., of Street Smart Nutrition and her Wild Blueberry Mango Lassi Smoothie, inspired by the popular yogurt-based drink from the Punjab region of India, is exquisitely simple, a touch exotic (because of the cardamom and cinnamon), and delicious. Cara’s variation on the traditional Lassi, includes a cup of frozen Wild Blueberries and it replaces yogurt with kefir, adding even more probiotic punch to this tasty treat. Since we are firm believers in sourcing fruit in the freezer aisle, we also applaud the use of frozen mango and frozen Wild Blueberries in this recipe. With only six ingredients (if you don’t count the water), this smoothie is nutritious, easy to make, and well-deserving of its runner-up status. Congratulations, Cara! We love your Wild Blueberry Mango Lassi Smoothie
  • Shashi Charles of Runnin Srilankan and her Oatmeal Wild Blueberry Breakfast Smoothie is one of the prettiest recipes we’ve ever seen and this smoothie tastes as good as it looks! Like so many of us, Shashi admitted to being in a “smoothie rut” before entering the Wild Your Smoothie Contest. Well, Shashi really broke the mold with this smoothie, and you’re going to love how she blended together a common list of ingredients into something truly special. Shashi starts with a cup of frozen Wild Blueberries, and then adds coconut milk, dried apricots, quick oats, banana, and peanut butter into this blend-and-go breakfast. “My bowl of breakfast oatmeal was my inspiration for this smoothie,” says Shashi. We also noted with pleasure that Shashi included two alternatives for the toppings – one decadent and one naked –  after getting some constructive feedback from her daughter. After all, not every smoothie lover is the same. Congratulations, Shashi! We love your Oatmeal Wild Blueberry Breakfast Smoothie

Grand Prize!

First place goes to Charlotte Martin, a registered dietitian and creator of Nutritiously Twisted, an online blog that’s devoted to putting a healthy twist on old standby recipes. Charlotte’s beautiful, gluten-free Wild Blueberry Flax Muffin Smoothie was the runaway winner of the contest, earning 25 percent more votes than any other smoothie recipe in our terrific group of finalists. Charlotte’s delicious recipe brings together a tasty collection of ingredients, including a full cup of frozen Wild Blueberries, almond flour, unsweetened vanilla almond milk, and a tablespoon of instant espresso! It’s topped with a gorgeous vanilla Greek yogurt “frosting” that simply takes the prize! (Charlotte, please share how you created that beautiful topping!)

The addition of coffee to Charlotte’s smoothie was another standout. As a self-proclaimed caffeine lover, Charlotte likes to start her day with coffee. But to make her routine fast and easy, she simply blends a little coffee right into her smoothie. “This Wild Blueberry Flax Muffin Smoothie is your whole morning in one,” says Charlotte. “It’s like your Frappuccino and Wild Blueberry muffin had a healthy baby.”

Congratulations, Charlotte, we love your Wild Blueberry Flax Muffin Smoothie recipe and we’re excited to meet you this summer as we explore Bar Harbor and the Wild Blueberry barrens of Maine!

How to Judge a Winning Wild Blueberry Smoothie

It’s here! The official voting period for the Wild Your Smoothie Recipe Contest! For the past month, registered dietitian nutritionists and food bloggers got wild and whipped up their best smoothies using antioxidant-packed frozen Wild Blueberries in hopes of winning a chance to visit the Wild Blueberry Barrens in Bar Harbor, Maine and win a little spending money. Now, it’s up to YOU. You have the chance from now until Tuesday, March 6 to vote for your favorite smoothie recipe from our list of 10 finalists.

With flavorful Wild Blueberries as the shining star of the smoothie, it can be hard to choose a favorite, as they’re all so delicious. But don’t let that stop you from voting! I’ve got five tips to share with you today to help you judge a winning Wild Blueberry smoothie.

  1. Get creative. Most people can whip up a smoothie with some frozen Wild Blueberries, banana and milk. But what people are really looking for are new ideas to shake up their smoothie routine and get them excited about breakfast or snack time. This is why creativity counts big time. When judging smoothies, give weight to those that use creative and surprising ingredients like jalapenos, green tea, lavender, kombucha or beets.
  2. Appearance is everything. We eat with our eyes first. Our sight is the first sense we engage when sitting down to eat a meal and so our visual perception of food influences our overall judgment. If a smoothie is brown in color, we probably won’t be salivating at its sight as much as we would if the smoothie was a vibrant bright blue. To help narrow down your choices, notice the appearance of the smoothies. What catches your eye and draws you in?
  3. Know your nutrition. Health is one of the most common reasons folks choose smoothies for a meal or snack. For that reason, let’s give bonus points to the smoothies that pack a powerful nutrient punch. What should you look for to gauge the nutrition of a smoothie? Sources of protein like yogurt, kefir, protein powder or tofu, sources of fiber like leafy greens, nuts or seeds, and health supporting boosters like turmeric, ginger or green tea. The more nourishing the smoothie, the better.
  4. Make sure it’s satisfying. I use this guideline with my private practice clients a lot. So often my clients forget the importance of pleasure and satisfaction for health and wellness and happiness. They choose foods based on calories and health redeeming qualities and forget about the pleasure piece. We should choose foods that are satisfying to us; the more satisfied we are after a meal, the less likely we are to overeat later on. So when you’re choosing your winning smoothie, ask yourself would this be satisfying to me? Does it have enough sustenance to hold me over until my next meal or snack? And do I like the taste of it enough to find pleasure from it?
  5. Taste rules. Taste is the #1 reason a person chooses one food (or one smoothie) over another. Taste trumps nutrition, cost, convenience, etc. and it should be no different with judging a smoothie contest. Once you’ve narrowed down your choices based on creativity, nutrition and appearance, try the final contenders out at home! Taste them to see which smoothie surprises and delights your taste buds the most. Taste will never steer you wrong.

While you’re judging these amazing Wild Blueberry smoothies, you’ll need some fuel to carry you through. Sip on this Wild Blueberry Rooiberry Tea Latte Smoothie and practice judging it – does it use creative ingredients? Is there visual appeal? Does it pack in nutrition? What does it taste like? And lastly, does it satisfy your hunger and your taste buds?

Don’t forget that the voting period runs from February 28 – March 6 so start judging and tasting today!

Top 5 Smoothie Making Hacks

Let’s face it – we love smoothies for their convenience, ease and portability. However, in the busy mornings we know that every minute (and every second!) counts. So while it may not take that long to make a smoothie for breakfast before you head out the door, there are some time-saving tips for smoothie making that can help you hit the snooze button one more time, get to the office before everyone else or even better, carve out some time for morning self-care.

I love taking time on Sundays to prep meals for the week ahead. This makes the workweek less chaotic and allows me to carve out some “me time” during the weekly grind. My morning routine is sacred to me. I gave up checking my phone and emails upon waking a long time ago. Now my mornings are my quiet time to meditate or practice yoga to start the day feeling grounded and present. The only way I can find the time to practice self-care in the morning is if I plan ahead and make breakfasts for the week on Sunday.

Now, you may be thinking how can I prepare ahead of time for smoothies? Well, I’ve got 5 simple smoothie-making hacks to share with you today to help make your weekday mornings stress-free.

  1. Make smoothie freezer packs. Ever feel like smoothie making is quite the production? Do you have a counter filled with bags of frozen fruit, liquids, greens, powders, nuts and seeds? Does it take you forever to find that bag of walnuts at the back of the cupboard? Ever wish you could just have all your smoothie-making ingredients ready to go in one place to throw in the blender? You can! Portion out your smoothie ingredients like frozen Wild Blueberries, sliced bananas and kale into freezer Ziploc bags at the beginning of the week and label them with the date and type of smoothie. Come morning all you have to do is open up the bag, toss the contents into your blender, add liquid and blend away!
  2. Take advantage of the ice cube tray. With the ice cube tray, you can add a frosty consistency to your smoothies while adding flavor! No more diluting your smoothie’s flavor with regular ice cubes; think about freezing liquids like coconut milk, juice, coffee or tea. Simply add a few liquid ice cubes to your smoothie and cut the amount of liquid added in half. However, with frozen Wild Blueberries, you don’t have to worry about using ice cubes or diluting your smoothie – they help keep your smoothie cold while packing in deliciously sweet flavor, which is just one of the many reasons I love using them in smoothies. For another time-saver, pre-portion yogurt into ice cube trays and add the yogurt cubes to your smoothie freezer packs!
  3. Don’t waste about-to-turn produce. We’ve all been there – you buy a bunch of bananas only to watch them turn brown in your fruit bowl. Rather than tossing them, avoid food waste and take advantage of their ripeness and flavor and use in smoothies! Puree extra ripe bananas and store in ice cube trays or simply slice them and store in Ziploc freezer bags. Take ‘em out when you’re ready for your banana-powered smoothie.
  4. Batch-make smoothies. Heard of batch cooking to help you save time and energy during the week? It involves making a large portion of a meal to refrigerate or freeze to enjoy later in the week. Well, you can batch-make smoothies too! Make 3-4+ servings of your favorite smoothie recipe on Sunday evening and pre-portion them into mason jars. All you’ll have to do in the morning is grab a mason jar, give it a good shake (as the contents will begin to separate) and be on your way!
  5. Turn leftovers into popsicles. Food waste is one of my biggest pet peeves so I try to repurpose leftovers whenever I get the chance and smoothies are no exception to this rule! Whenever you make too much of a smoothie and have leftovers, pour the remaining smoothie into a popsicle mold and freeze for a refreshing treat another day.

Ready to start hacking away at your smoothie hacks? Try my Wild Blue Velvet smoothie recipe below. You can freeze the yogurt in an ice cube tray and make smoothie freezer packs with frozen Wild Blueberries, beets and yogurt. Toss the contents into the blender in the morning, add your powder and liquid and you’re ready to conquer the day!

Easy Valentine’s Day Wild Blueberry Crumb Cake

We get excited about Valentine’s Day at our house! It’s all about the gifts and the homemade cards and of course….the food. We love to start the day off with breakfast in bed and then cook something special for dinner as a family.

Nothing says I love you better than a tasty homemade crumb cake. Especially if it comes from me. As a self-professed non-baker, if I’m getting my cake on, it’s a special occasion!

What I love about crumb cake is that it’s an anytime-of-day delight: perfect with coffee in the morning, tea in the afternoon, or a delicious dessert.

I created this recipe to please the two loves in my life on Valentine’s Day.  First, as a thank you to my husband who always goes above and beyond for his favorite girls on Valentine’s Day. Second for Norah, who wants nothing more than to have cake for breakfast. I even get to please myself because I can secretly tinker with the recipe to make it a little healthier.

Since we’re a house of Wild Blueberry lovers, adding a cup into the mix is one of my “health it up” secret weapons. Normally with coffee cake you would add a layer of cinnamon sugar to the center of the cake, but I used frozen Wild Blueberries instead. This way each delicious bite is bursting with incredible Wild Blueberry flavor!

Of course it’s also nice to know that I’m sneaking in a serving of antioxidants, as well. With double the antioxidants as tame blueberries, Wild Blueberries offer a wide range of natural antioxidants that help protect against disease. Wild Blueberries are especially rich in anthocyanin, a flavonoid with potent antioxidant capacity. Highly concentrated in the deep-blue pigments of Wild Blueberries, anthocyanin is responsible for both color and powerful health protection potential.

This delicious Wild Blueberry Crumb Cake is low in sugar and super simple to make using healthy, whole food ingredients.  I hope you’ll make it for someone you love!

Top 5 Trending Smoothie Immune Boosters for Winter

It’s the start of a New Year, which means everyone is getting their smoothie on to improve nutrition and eat healthier. It’s also the dead of winter, which means that cold and flu season is rearing its ugly head. Over the holidays, my Mom, Dad and sister all came down with a cold. Lucky for me, I fought off whatever it was that ailed them. My secret to avoiding the cold and flu like the plague? Well besides adequate sleep, regular movement and keeping stress at bay, it’s SMOOTHIES! I try to stockpile immune-boosting ingredients in my pantry during the winter so that I can load up on them regularly for prevention, especially when I feel those first signs of a cold coming on.

The immune system is a complex system with cells, tissues and organs, each with a specific role in fighting against harmful bacteria and viruses. Because it’s so complex, researchers are constantly trying to figure it out, which is why much of the research on diet to support immunity is preliminary. But as I talk about in my e-book, Nourish Your Namaste: How Nutrition and Yoga Can Support Digestion, Immunity, Energy and Relaxation, I’ll take preliminary research over catching a cold any day!

For example, research shows that various nutrient deficiencies – vitamins A, C, E, B, D, selenium, zinc, iron, copper and folic acid – can compromise your immune system and increase your susceptibility to cold and flu. So, when it comes to boosting your immunity, focus on choosing foods high in these vitamins and minerals, like oranges (vitamin C), sweet potatoes (vitamin A), kale (vitamin E), mushrooms (selenium and vitamin D) and garbanzo beans (zinc).

Smoothies are the perfect vehicle to load up on immune-boosting ingredients. While you probably wouldn’t sit down to a meal to eat a sweet potato, an orange, some kale, ginger root and kefir, you could throw all those things into a smoothie and easily drink it before work (or better yet, take it to the office with you)! Smoothies are an easy way to get in a lot of immune-boosting foods at once.

Wondering what some of my favorite immune boosting smoothie ingredients  are for the winter? Add these to any smoothie for a boost!

  1. Wild Blueberries: The tiny delicious berries are packed with antioxidants, in fact they contain 2x the antioxidants of regular (cultivated) blueberries. Every day, our cells wage a battle against free radicals – unstable oxygen molecules that are a normal byproduct of metabolism. When you aren’t getting enough antioxidants in your diet, free radicals can build up in your body, causing oxidative stress, which is associated with cancer, heart disease, diabetes and other diseases of aging. Dietary antioxidants such as anthocyanins, flavonoids found in the blue pigments of Wild Blueberries, have the ability to neutralize free radicals and help prevent cell damage. Antioxidants can also protect against inflammation, which may play a role in supporting our immune system. And these special little Wild Blueberries are found in the freezer aisle of your grocery store and available all year long and perfect for smoothies.
  2. Turmeric. Spice up your immune system with curcumin, the active ingredient in turmeric that gives it its vibrant orange/yellow color. Curcumin has been shown to enhance antibodies and immune cells, which help protect us from viruses and bacteria. Sprinkle a dash of turmeric in your next smoothie for a functional boost and mild peppery flavor.
  3. Ginger. This spice is known for a host of health benefits, especially its anti-inflammatory and antioxidant properties.. Sprinkle ground ginger or grate fresh ginger root into your next smoothie for a warm, spicy bite!
  4. Apple Cider Vinegar. Vinegar inhibits the enzymes that help you digest starch. This undigested starch acts as a prebiotic as it passes through your digestive system. You can think of prebiotics as food for your probiotics, supporting the growth of good-gut bacteria. Prebiotics and probiotics (and a healthy gut) help to support our immune systems. This doesn’t mean you should start drinking vinegar out of the bottle; however. A tablespoon of apple cider vinegar in your daily smoothie is plenty.
  5. Kefir. Including adequate amounts of probiotics (found in fermented foods like sauerkraut, yogurt and miso) in your diet is important to restore healthy bacteria in your gut to protect you from infections. Kefir, an ancient fermented milk beverage, packs in 12 different types of probiotics, which is 3x the amount yogurt contains! Add kefir to your smoothie for its probiotic punch as well as its creamy, rich consistency.
  6. Green Tea. Antioxidants found in green tea (specifically the polyphenols, catechins) have been shown to have antiviral and antimicrobial effects, especially against the flu. Next time you’re adding liquid to your smoothie, swap out coconut water or milk for green tea for an antioxidant boost!

For an immune-boost this winter, try my Wild Blueberry Turmeric Zinger Smoothie, complete with turmeric, ginger, apple cider vinegar, mango and citrus.

Start Your New Year Off Right with this Energizing Dairy Free Wild Blueberry Creamsicle Smoothie

I’m a believer in New Year’s resolutions. Although most of us are unable to stick to them long term, they can help you kick-start better eating and other healthy habits. Over the years, like many of you, I’ve learned to keep my proclamations a little more realistic and specific. Rather than saying, “I’m going to eat healthier every day,” I’ve written down  “add 5 new healthy foods to my regular weekly diet” and “swap my daily afternoon treat for a smoothie.” These new dietary goals should help me with my late afternoon workouts and that lull in energy I often feel later in the day. So as you make your resolutions for the New Year try being more detailed. You’ll find them more doable and easier to track.

wild-blueberry-creamsicle-smoothie-straw-ig-2

In the spirit of meeting those goals, I’ve come up with an indulgent but energizing smoothie recipe that will help me stay the course. I recently tried a blend of Wild Blueberries with orange and the combination was magical. The zesty orange and deliciously sweet-tart Wild Blueberries made my beverage come alive without the need for a long list of ingredients. Because I like my smoothies a little rich and fulfilling, I went the creamsicle route with a touch of coconut cream and vanilla. Overall, it’s a nourishing and rewarding blend.

For the best-tasting and most nutritious results, be sure to use frozen Wild Blueberries and freshly squeezed (not from concentrate) orange juice. Frozen Wild Blueberries guarantee far more flavor than the blander conventional blueberries you find in the produce section and they have twice the antioxidants too! Wild Blueberries have so much going for them. They occur and spread naturally on a wild landscape called the Barrens; they are never planted and haven’t been modified by humans in any way. The Wild Blueberries we buy today are basically the same as the ones that existed 10,000 years ago! You can’t say that about many foods.

Wild Blueberries are flash frozen at harvest to lock in all of their goodness and they are available year round. I usually buy them in the freezer section at Trader Joe’s or I pick up the Wyman’s brand at stores like Smart & Final or Whole Foods.

Make Breakfast Special with this Belgian Waffle with Wild Blueberry Cream Recipe

I rarely eat out these days. I honestly can’t remember the last time I ate out that wasn’t either a girl’s brunch or special occasion. Of course this doesn’t include when I’m traveling or on vacation. Even when I’m traveling for work, I tend to stick to my usual fare. It’s when I’m on vacation that I live it up. And by that I mean, I indulge just a bit more than usual.

img_2700-2

It’s a blessing and a curse having a palate for healthy food, but breakfast might be that one exception. Okay, there may be a few others (like French fries), but that’s for another post. When we go on family vacation, breakfast is a big deal. All three of us all look forward to it. We get up early and we’re one of the first family’s to arrive, well before 8:00 am. The hotels where we stay almost always offer a breakfast buffet, something I would normally make huge efforts to avoid!

My husband goes straight for the eggs, he’s a big omelet guy. Norah loves to get an enormous bowl of fruit with yogurt. Me? I head for the made-to-order waffles.

I love a freshly made waffle for breakfast; always topped with fresh whipped cream and berries, no syrup. I can’t describe the disappointment I feel when there’s no fresh whipped cream for my waffle. It’s literally a deal breaker.

Waffles are something I rarely make at home, especially from scratch. My daughter is a pancake gal and waffles hardly seem worth the effort (even though they’re way better). Since making waffles at home is such a treat, of course they deserve some special attention.

This Belgian Waffle with Wild Blueberry Cream is loaded with deliciousness. It’s a perfectly cooked Belgian waffle that is topped with a creamy mascarpone Wild Blueberry spread and homemade no-bake granola.

img_2696-2

You might be thinking where’s the whipped cream? Well, for this recipe I’m actually trying something close, but a little different. My Wild Blueberry mascarpone cheese is a lot like whipped cream (just a little thicker and more amazing) and I thought it would be fun to add some texture with the almond oat granola.

My almond oat granola is a secret weapon in many dishes. I love it on top of Chia seed pudding. It has a wonderful crunch and it’s relatively healthy compared to the average baked granola. It’s also a no-bake recipe and there’s really nothing much better than that!

Even with the beautiful Belgian waffle and my no-bake granola, the Wild Blueberries are the star of this dish. I love their intense color and flavor and the perfect amount of sweetness they add to the mascarpone cheese. I only needed to add a little bit of maple syrup to sweeten it just right.

The next time you’re having a waffle craving, why not take it to the next level? Skip the syrup and try my mascarpone Wild Blueberry cream. You won’t be disappointed.
