Easy Valentine’s Day Wild Blueberry Crumb Cake

We get excited about Valentine’s Day at our house! It’s all about the gifts and the homemade cards and of course….the food. We love to start the day off with breakfast in bed and then cook something special for dinner as a family.

Nothing says I love you better than a tasty homemade crumb cake. Especially if it comes from me. As a self-professed non-baker, if I’m getting my cake on, it’s a special occasion!

What I love about crumb cake is that it’s an anytime-of-day delight: perfect with coffee in the morning, tea in the afternoon, or a delicious dessert.

I created this recipe to please the two loves in my life on Valentine’s Day.  First, as a thank you to my husband who always goes above and beyond for his favorite girls on Valentine’s Day. Second for Norah, who wants nothing more than to have cake for breakfast. I even get to please myself because I can secretly tinker with the recipe to make it a little healthier.

Since we’re a house of Wild Blueberry lovers, adding a cup into the mix is one of my “health it up” secret weapons. Normally with coffee cake you would add a layer of cinnamon sugar to the center of the cake, but I used frozen Wild Blueberries instead. This way each delicious bite is bursting with incredible Wild Blueberry flavor!

Of course it’s also nice to know that I’m sneaking in a serving of antioxidants, as well. With double the antioxidants as tame blueberries, Wild Blueberries offer a wide range of natural antioxidants that help protect against disease. Wild Blueberries are especially rich in anthocyanin, a flavonoid with potent antioxidant capacity. Highly concentrated in the deep-blue pigments of Wild Blueberries, anthocyanin is responsible for both color and powerful health protection potential.

This delicious Wild Blueberry Crumb Cake is low in sugar and super simple to make using healthy, whole food ingredients.  I hope you’ll make it for someone you love!

Top 5 Trending Smoothie Immune Boosters for Winter

It’s the start of a New Year, which means everyone is getting their smoothie on to improve nutrition and eat healthier. It’s also the dead of winter, which means that cold and flu season is rearing its ugly head. Over the holidays, my Mom, Dad and sister all came down with a cold. Lucky for me, I fought off whatever it was that ailed them. My secret to avoiding the cold and flu like the plague? Well besides adequate sleep, regular movement and keeping stress at bay, it’s SMOOTHIES! I try to stockpile immune-boosting ingredients in my pantry during the winter so that I can load up on them regularly for prevention, especially when I feel those first signs of a cold coming on.

The immune system is a complex system with cells, tissues and organs, each with a specific role in fighting against harmful bacteria and viruses. Because it’s so complex, researchers are constantly trying to figure it out, which is why much of the research on diet to support immunity is preliminary. But as I talk about in my e-book, Nourish Your Namaste: How Nutrition and Yoga Can Support Digestion, Immunity, Energy and Relaxation, I’ll take preliminary research over catching a cold any day!

For example, research shows that various nutrient deficiencies – vitamins A, C, E, B, D, selenium, zinc, iron, copper and folic acid – can compromise your immune system and increase your susceptibility to cold and flu. So, when it comes to boosting your immunity, focus on choosing foods high in these vitamins and minerals, like oranges (vitamin C), sweet potatoes (vitamin A), kale (vitamin E), mushrooms (selenium and vitamin D) and garbanzo beans (zinc).

Smoothies are the perfect vehicle to load up on immune-boosting ingredients. While you probably wouldn’t sit down to a meal to eat a sweet potato, an orange, some kale, ginger root and kefir, you could throw all those things into a smoothie and easily drink it before work (or better yet, take it to the office with you)! Smoothies are an easy way to get in a lot of immune-boosting foods at once.

Wondering what some of my favorite immune boosting smoothie ingredients  are for the winter? Add these to any smoothie for a boost!

  1. Wild Blueberries: The tiny delicious berries are packed with antioxidants, in fact they contain 2x the antioxidants of regular (cultivated) blueberries. Every day, our cells wage a battle against free radicals – unstable oxygen molecules that are a normal byproduct of metabolism. When you aren’t getting enough antioxidants in your diet, free radicals can build up in your body, causing oxidative stress, which is associated with cancer, heart disease, diabetes and other diseases of aging. Dietary antioxidants such as anthocyanins, flavonoids found in the blue pigments of Wild Blueberries, have the ability to neutralize free radicals and help prevent cell damage. Antioxidants can also protect against inflammation, which may play a role in supporting our immune system. And these special little Wild Blueberries are found in the freezer aisle of your grocery store and available all year long and perfect for smoothies.
  2. Turmeric. Spice up your immune system with curcumin, the active ingredient in turmeric that gives it its vibrant orange/yellow color. Curcumin has been shown to enhance antibodies and immune cells, which help protect us from viruses and bacteria. Sprinkle a dash of turmeric in your next smoothie for a functional boost and mild peppery flavor.
  3. Ginger. This spice is known for a host of health benefits, especially its anti-inflammatory and antioxidant properties.. Sprinkle ground ginger or grate fresh ginger root into your next smoothie for a warm, spicy bite!
  4. Apple Cider Vinegar. Vinegar inhibits the enzymes that help you digest starch. This undigested starch acts as a prebiotic as it passes through your digestive system. You can think of prebiotics as food for your probiotics, supporting the growth of good-gut bacteria. Prebiotics and probiotics (and a healthy gut) help to support our immune systems. This doesn’t mean you should start drinking vinegar out of the bottle; however. A tablespoon of apple cider vinegar in your daily smoothie is plenty.
  5. Kefir. Including adequate amounts of probiotics (found in fermented foods like sauerkraut, yogurt and miso) in your diet is important to restore healthy bacteria in your gut to protect you from infections. Kefir, an ancient fermented milk beverage, packs in 12 different types of probiotics, which is 3x the amount yogurt contains! Add kefir to your smoothie for its probiotic punch as well as its creamy, rich consistency.
  6. Green Tea. Antioxidants found in green tea (specifically the polyphenols, catechins) have been shown to have antiviral and antimicrobial effects, especially against the flu. Next time you’re adding liquid to your smoothie, swap out coconut water or milk for green tea for an antioxidant boost!

For an immune-boost this winter, try my Wild Blueberry Turmeric Zinger Smoothie, complete with turmeric, ginger, apple cider vinegar, mango and citrus.

Start Your New Year Off Right with this Energizing Dairy Free Wild Blueberry Creamsicle Smoothie

I’m a believer in New Year’s resolutions. Although most of us are unable to stick to them long term, they can help you kick-start better eating and other healthy habits. Over the years, like many of you, I’ve learned to keep my proclamations a little more realistic and specific. Rather than saying, “I’m going to eat healthier every day,” I’ve written down  “add 5 new healthy foods to my regular weekly diet” and “swap my daily afternoon treat for a smoothie.” These new dietary goals should help me with my late afternoon workouts and that lull in energy I often feel later in the day. So as you make your resolutions for the New Year try being more detailed. You’ll find them more doable and easier to track.

wild-blueberry-creamsicle-smoothie-straw-ig-2

In the spirit of meeting those goals, I’ve come up with an indulgent but energizing smoothie recipe that will help me stay the course. I recently tried a blend of Wild Blueberries with orange and the combination was magical. The zesty orange and deliciously sweet-tart Wild Blueberries made my beverage come alive without the need for a long list of ingredients. Because I like my smoothies a little rich and fulfilling, I went the creamsicle route with a touch of coconut cream and vanilla. Overall, it’s a nourishing and rewarding blend.

For the best-tasting and most nutritious results, be sure to use frozen Wild Blueberries and freshly squeezed (not from concentrate) orange juice. Frozen Wild Blueberries guarantee far more flavor than the blander conventional blueberries you find in the produce section and they have twice the antioxidants too! Wild Blueberries have so much going for them. They occur and spread naturally on a wild landscape called the Barrens; they are never planted and haven’t been modified by humans in any way. The Wild Blueberries we buy today are basically the same as the ones that existed 10,000 years ago! You can’t say that about many foods.

Wild Blueberries are flash frozen at harvest to lock in all of their goodness and they are available year round. I usually buy them in the freezer section at Trader Joe’s or I pick up the Wyman’s brand at stores like Smart & Final or Whole Foods.

Granola Business Grows with Innovative Products, Premium Ingredients, and Solar Power

Maine has long been known for its lobster and Wild Blueberries, but if two Western Maine entrepreneurs have their way, the state may be on its way to becoming a hub for organic Granola, too.

dsc_3527-v2

GrandyOats founders Aaron Anker and Nat Peirce have been quietly expanding their homegrown business for the last two decades from a renovated dairy barn in rural Brownfield, Maine. In 2013, bursting at the seams and in need of more space for their distinctive hand mixing and baking process, the partners launched a region-wide search for a bigger building. Instead of pulling up their rural roots and moving closer to an urban center, they opted to remain in rural Western Maine.

“The decision to stay put may seem counterintuitive for a mainstream business,” laughs Chief Granola Officer Anker. “But we’re not mainstream. We wanted to support rural jobs and economic development in our home state.”

In 2014, GrandyOats closed a deal to purchase a 13,000-square-foot elementary school in Hiram that had been sitting idle since 2009. The company hired an architect and renovated the schoolhouse into a modern baking and mixing facility that has the warm bohemian feel and delicious aroma of a local bakery.

In the sprawling field behind the bakery, the entrepreneurs installed 288 solar panels, making them among the first net-zero, entirely solar-powered food manufacturers in New England. A stunning new series of videos highlights the new facility, the solar array, and the tale of their growth and laid-back philosophy.

dsc_3540

From this new expanded location, GrandyOats creates more than three-dozen organic and gluten-free products, including traditional and grain-free granola, muesli, nuts, and trail mix. Anker notes that his company spends a lot of extra time and money sourcing premium ingredients. “Every month, we buy about 4,000 pounds of locally farmed organic oats, which costs more but it’s the right thing to do. We also source premium organic dried Wild Blueberries because they’re grown nearby, and they’re healthier and tastier than regular cultivated blueberries.”

These intentional decisions and a smart business plan have helped propel the company’s significant growth. GrandyOats sales have rocketed to $5 million in 2015, with sales in thousands of outlets across the country.

A Yummy Product that Uses Wild Blueberries

All of the GrandyOats products are delicious, but we have a special place in our heart for the Wild Blueberry Granola, made with organic dried Wild Blueberries. The packaging for this unique flavor claims it’s made in small batches using “Only the Good Stuff” including organic free oats, organic honey, organic sunflower seeds, and organic Wild Blueberries. It’s also gluten free.

dsc_3524

“There’s a wild world of flavor in every bite,” reads the romance language on the bag. Indeed, the Wild Blueberries in this tasty granola are dried and sweetened with organic fruit juice, giving them a perfect chewy, sweet, tangy flavor. A yummy treat for any time of the year.

Make Breakfast Special with this Belgian Waffle with Wild Blueberry Cream Recipe

I rarely eat out these days. I honestly can’t remember the last time I ate out that wasn’t either a girl’s brunch or special occasion. Of course this doesn’t include when I’m traveling or on vacation. Even when I’m traveling for work, I tend to stick to my usual fare. It’s when I’m on vacation that I live it up. And by that I mean, I indulge just a bit more than usual.

img_2700-2

It’s a blessing and a curse having a palate for healthy food, but breakfast might be that one exception. Okay, there may be a few others (like French fries), but that’s for another post. When we go on family vacation, breakfast is a big deal. All three of us all look forward to it. We get up early and we’re one of the first family’s to arrive, well before 8:00 am. The hotels where we stay almost always offer a breakfast buffet, something I would normally make huge efforts to avoid!

My husband goes straight for the eggs, he’s a big omelet guy. Norah loves to get an enormous bowl of fruit with yogurt. Me? I head for the made-to-order waffles.

I love a freshly made waffle for breakfast; always topped with fresh whipped cream and berries, no syrup. I can’t describe the disappointment I feel when there’s no fresh whipped cream for my waffle. It’s literally a deal breaker.

Waffles are something I rarely make at home, especially from scratch. My daughter is a pancake gal and waffles hardly seem worth the effort (even though they’re way better). Since making waffles at home is such a treat, of course they deserve some special attention.

This Belgian Waffle with Wild Blueberry Cream is loaded with deliciousness. It’s a perfectly cooked Belgian waffle that is topped with a creamy mascarpone Wild Blueberry spread and homemade no-bake granola.

img_2696-2

You might be thinking where’s the whipped cream? Well, for this recipe I’m actually trying something close, but a little different. My Wild Blueberry mascarpone cheese is a lot like whipped cream (just a little thicker and more amazing) and I thought it would be fun to add some texture with the almond oat granola.

My almond oat granola is a secret weapon in many dishes. I love it on top of Chia seed pudding. It has a wonderful crunch and it’s relatively healthy compared to the average baked granola. It’s also a no-bake recipe and there’s really nothing much better than that!

Even with the beautiful Belgian waffle and my no-bake granola, the Wild Blueberries are the star of this dish. I love their intense color and flavor and the perfect amount of sweetness they add to the mascarpone cheese. I only needed to add a little bit of maple syrup to sweeten it just right.

The next time you’re having a waffle craving, why not take it to the next level? Skip the syrup and try my mascarpone Wild Blueberry cream. You won’t be disappointed.

Here’s to made-to-order waffles anytime!

Wild Blueberry Winter Wellness Smoothie

Wild Blueberries are a perfect ingredient for wellness in our Wild Blueberry Winter Wellness Smoothie! They’re packed with antioxidants, naturally low fat, high in fiber, and an excellent source of manganese, which is important for bone health. They also taste utterly delicious!

2016_11_06_9-22-16_9999_1healthyhappylife2000wb

On the eve of cold and flu season and the busy holidays, I’ve been thinking about these two amazing Wild Blueberry wellness facts and how they make me want to incorporate more Wild Blueberries into my diet.

  1. Antioxidants. Wild Blueberries contain two times the antioxidants of regular (cultivated) blueberries, and this means they can boost your immune system and play a role in preventing the common cold. Wild Blueberries have more skin, more pulp and less water than cultivated blueberries, which means more antioxidant-rich pigment.
  2. Low or No Pesticides. Because Wild Blueberries thrive in their natural environment, they do not need nearly the amount of pesticides that cultivated berries need. So you can feel confident buying non-organic or organic Wild Blueberries!
2016_11_06_9-22-16_9999_12healthyhappylife2000wb

Here’s a short list of my favorite ways to enjoy Wild Blueberries, during the winter:

  • In oatmeal or rice porridge
  • Baked into fluffy Wild Blueberry muffins or breads or donut holes!
  • Blended into wellness smoothies
  • Blended into fresh salad dressings and savory sauces
  • As a topping over banana ice cream
  • In pancakes and waffles

There are so many delicious and healthy uses for Wild Blueberries in winter! Today’s smoothie is perfect for wellness, not only because it’s loaded with Wild Blueberries, but because it includes five more immune-system boosting ingredients:

  • Walnuts – Rich in healthy fats, omega fatty acids and vitamin E
  • Hemp Seeds – Naturally rich in plant-based protein, omega fatty acids, magnesium, iron and zinc
  • Banana – Rich in potassium and fiber
  • Citrus Zest – Yes the zest is good for you too! It’s packed with vitamin C and bioflavonoids.
  • Cinnamon – Blood sugar balancing and warming.

Too cold for a smoothie? Never. You can make this smoothie “less cold” by omitting the ice and using a non-frozen banana. You can even allow the Wild Blueberries to thaw a bit so they’re not ice cold from the freezer.

What’s good for your body is good for your skin

Maine entrepreneur gains traction with Wild Blueberry all-natural beauty line

In one of the most rural corners of America, Nancy Lowry is hard at work building a conscious company. Lowry calls herself a farmer, and as someone who lives and works on a 12-acre farm, she certainly qualifies. But she’s more than a farmer. She’s an entrepreneur who’s making a name for herself as the owner of a certified organic personal care beauty line.

nancy-lowry

Indian Meadow Herbals is riding a “Farm-to-Face” beauty trend that took hold on the West Coast and has been gaining traction across the country. Not surprisingly, her strongest markets are in San Francisco and now Baltimore.

“Our products are designed for American women who are buying skincare products with ingredients in mind,” says Lowry. “Personal care products, historically, have been filled with synthetic chemicals, preservatives, alcohols, and parabens. I wanted to create something for women seeking a clean alternative.”

For 22 years, Lowry has been hard at work doing just that. And she’s managed to nurture her company from the tiny, largely unknown town of Eastbrook, Maine, home to about 120 families, with a meager population of 423 residents. The region may be short on people, but it’s not devoid of beauty or opportunity.

The expansive landscape surrounding the business includes forest, marsh, ponds, and thousands of acres of Wild Blueberry barrens. The rocky acidic soil in this region is especially hospitable to Wild Blueberries, which have thrived here for over 10,000 years. It turns out, these tiny antioxidant-rich berries take center stage in Lowry’s top-selling line of beauty products, aptly called: The Blue Line.

“The Blue Line uses certified organic Wild Blueberries grown right here in Maine,” explains Lowry. The same anti-aging, anti-inflammatory, antioxidant properties that make Wild Blueberries a healthy food are the reason they work on your skin. “It’s pretty simple,” explains Lowry, “what’s good for you on the inside is extremely beneficial on the outside too.”

Lowry is passionate about the benefits of botanical skincare products and the reasons why they matter. “People don’t often stop to consider that fully 60 percent of what you put on your skin is absorbed into your body,” she states.

the-blue-line

Where to find Indian Meadow Herbals
Getting your hands on Indian Meadow Herbals products is relatively easy. They are available online and are sold in nearly 300 grocery and health foods stores across the country. The Blue Line, a certified organic skin care system made up of five Wild Blueberry inspired products includes the following:

  1. Wild Blueberry Facial Cleanser
  2. Wild Blueberry Lavender Facial Mist
  3. Wild Blueberry Cream for Mature Skin
  4. Wild Blueberry Lotion for Sensitive Skin
  5. Wild Blueberry Eye Cream

The most popular Blue Line product is the Wild Blueberry Cream for Mature Skin. Why? Probably because as women age, they become more focused on their skincare, and customers who use the Cream for Mature Skin report that their skin looks great and their face is “dewy,” reports Lowry. All five Blue Line products are certified organic, and packaged in deep-violet Miron glass, which is proven to protect products against the harmful effects of light.

Lowry’s company is USDA-certified by the Maine Organic Farmers and Gardeners Association. In addition, it recently passed FDA inspection and is in the process of being approved by The Environmental Working Group, a third party seal of approval.

Making a beauty product from scratch
A certified herbalist and Lowry’s original business partner developed Indian Meadow Herbals’ formulations. Using Wild Blueberries as a product ingredient took a leap of faith and some experimental ingenuity, but Lowry says her team felt strongly that the health attributes of the Wild Blueberry plants could and would deliver potent skincare benefits. The formulation process involves harvesting and winnowing the Wild Blueberries at their peak of ripeness in August, freezing them to stabilize them, then thawing, drying, and using a slow-heat process to extract their valuable oils and bio-chemical constituents. From there, the Wild Blueberry extracts are mixed with other herbs and oils and then strained, resulting in a high-quality botanically sourced beauty line.

“I’d never heard of a Wild Blueberry beauty line,” says Lowry, “but we were surrounded by acres of Wild Blueberries and given their health properties, we knew it was worth a try.”

Lowry’s journey as an entrepreneur has pushed her in unforeseen ways. “I never thought I’d be in sales,” she confesses. But the challenges have been worth it. “On a daily basis some random retail customer will call me and say, ‘Please don’t ever stop making your products,’” she says. “It’s really nice to hear them say that.”

More than just a source of pride, her business represents a moral and ethical contract with customers. “I absolutely won’t sell someone something I do not totally 100% believe in.”

Holiday Promotion: Special Skincare Offer
The snow will soon be flying over the fields at Indian Meadow Herbals, and Lowry expects to sell a large volume of holiday gifts and stocking stuffers. For a short time, she is offering an “Indian Meadow Herbals Goes Crazy for the Holidays” promotion. Click here to learn more.

Gluten Free Wild Blueberry Cornbread Loaves with Wild Blueberry “Butter”

Growing up, making mini bread loaves was a holiday tradition in our home. My mom churned out dozens of little loaves of pumpkin bread and packaged them up as gifts for neighbors, coworkers, and friends. I still make a dairy-free version of that pumpkin bread, but I also love to experiment with mini- loaf recipes packed with delicious new flavors.

My latest venture is a Sweet Cornbread spiked with a generous smattering of flavorful Wild Blueberries.

blueberry-cornbread-batter-ig-6

Wild Blueberries are a neat surprise to have around the holidays, since people typically think that blueberries are merely a summer fruit. One of the great things about Wild Blueberries is that you can enjoy them all year round because they are flash frozen, within 24 hours of harvest locking in their nutrition and flavor. You can pick them up in the freezer section of most supermarkets – even Trader Joe’s has them!

wb-cornbread-loaves-feature

Wild Blueberries are also smaller in size when compared to regular blueberries, which means you’ll get more berry in each bite compared to regular blueberries. Because they have twice the antioxidants of cultivated blueberries, Wild Blueberries also provide more intense blueberry flavor to my sweet cornbread recipe. Yes, higher nutrition equates to more flavor! Cool, huh? Wild Blueberries are tasty little super-fruits that Mother Nature has perfected over 10,000 years. I’ve only been perfecting my mini loaf recipes for a decade or so, but I think this one is definitely worthy of those sweet-tart gems.
