Wild Blueberry and BBQ Chicken Calzone

Inspired by a classic calzone, this sweet and savory combination of wild blueberries, bacon crumbles, and BBQ chicken provides a tasty breakfast or lunch. Make sure you use wild blueberries to make sure you get the bold blueberry flavor your students are looking for. Pair the calzone with a wild blueberry sauce to provide ½ cup of fruit.

2 oz. eq./50 eachPizza dough, individual (6 inches), whole-grain rich
3 pounds, 6 ouncesWild blueberries, frozen
3 pounds, 2 ouncesChicken, cooked, diced or shredded
3 pounds, 2 ouncesCheese, Cheddar, shredded
1 pound (4 cups)Bacon, cooked, crumbles
2 cupsBarbecue sauce, low sodium

1.Preheat oven to 350 °F.

2.On a parchment-lined, full sheet tray, lay out pizza dough rounds.

3.Combine frozen wild blueberries, chicken, cheese, bacon, and barbecue sauce. Stir gently to thoroughly combine.

4.Place a no. 8 scoop (½ cup) of filling on each pizza round.

5.Fold in half and seal the pizza dough tightly using the tines of a fork around the edge. Use a small amount of water to help seal, if necessary.

6.Bake for 20 to 25 minutes or until crust is golden brown.

7.CCP: Heat to 165 °F for 15 seconds.

8.CCP: Hold for hot service at 135 °F or higher.
