- 4 pork chops (about 5 oz each)
- cooking spray
- 2 cups chopped rhubarb
- 2 cups Wild Blueberries
- 2 tablespoons honey
- 2 tablespoons brown sugar
- 1/8 teaspoon cinnamon
- 1/4 cup flour
- salt and pepper to taste
Dredge chops in flour, salt and pepper to coat. Spray skillet with cooking spray, and brown chops. Mix rhubarb, berries, honey, brown sugar and cinnamon and add to chops in skillet. Cook at medium-low heat for 20 to 30 minutes. Serves 4
