Makes one cocktail.
Cocktail Ingredients:
.5 oz Rich Wild Blueberry Syrup*
3 dashes of Fee Brothers Peach Bitters
2 dashes of Sea Salt Solution*
Sparkling Wine
Rich Wild Blueberry Syrup Ingredients
1 ⅔ (250g) Frozen Wild Blueberries
2 ½ cups (500g) White Sugar
¼ cup + 3 tbsp (100g) Hot Water
Sea Salt Solution Ingredients
¼ cup + 3 tbsp (100g) Hot Water
1 ½ tsp (10g) Maldon Salt
Cocktail Directions:
Add the bitters, sea salt solution, and blueberry syrup to a champagne flute. Top with sparkling wine and a lemon twist, and enjoy.
This is a great recipe to serve for a crowd or take on the go! Grab a 4 pack of sparkling wine cans and you can build this recipe right in the can if you please.
Rich Wild Blueberry Syrup Directions
Add your frozen wild blueberries to a pan and begin heating over medium heat. As your wild blueberries defrost and you begin to see some liquid forming on the bottom of the pan (approx 2 mins), add in your white sugar. Stir constantly for 5-7 minutes, smashing the wild blueberries with a wooden spoon. Do not let your syrup boil! Once the sugar is completely dissolved, remove from heat and fine strain your syrup into a heatproof bowl. Press on the berries in the strainer to release all their juices. Add hot water to your syrup to loosen it a little, transfer to a closed container and store in the fridge for up to 3 weeks.
Sea Salt Solution Directions
Add Maldon salt to the hot water and stir until completely dissolved. Transfer the solution to a dropper bottle or dasher bottle.
