Maine Wild Blueberry Soup

Ingredients

  • 4 1/2 cups fresh Wild Blueberries
  • 1 cup Pinot Noir
  • 1/4 cup honey
  • vanilla crème fraîche for garnish

Preparation

In a food processor, combine the blueblueberries, Pinot Noir, and honey; blend until the mixture becomes smooth, do not strain. Chill the soup before serving. Garnish each soup bowl with vanilla crème fraîche. Serves 4.
