
Blueberry-Pineapple Parfait
Ingredients
- 1 can (20 oz) pineapple chunks, drained
- 1 container (8 ounces) lemon-flavored fat-free yogurt
- 1 1/2 cups fresh or thawed frozen blueberries, patted dry
- 1/2 cup granola
Preparation
In a small bowl, combine the pineapple with half the yogurt. In small wineglasses or juice glasses, alternately layer the pineapple-yogurt mixture, blueberries, and granola. Repeat the layering twice. Top each parfait with a dollop of yogurt. Serves 4.
